Thymus vulgaris 'French' (French thyme)
A variety similar to the straight species but with leaves that are narrower, grayer, sweeter, and meatier in texture. Essential in French cooking, this thyme is used with stews, soups, ragout, meats, seafood, veggies, and sauces. French thyme is a basic herb in the savory seasoning satchel, Bouquet Garni, because it retains its flavor and scent during the cooking process. Also prized for its preservative properties (used to keep meats, ice cream, and candies from spoiling). 1-1.5'H x 1-1.5'W. USDA Zones 4-8.
