Fennel - Foeniculum vulgare (Florence fennel)
Similar in use, appearance, growth, and maintenance requirements to dill (Anethum graveolens), this perennial herb has a swollen, bulb-like stem base that is used as a vegetable. A highly aromatic and flavorful herb with culinary and medicinal uses and, along with the similar-tasting anise, is one of the primary ingredients of absinthe (along with wormwood aka Artemisia absinthium). Fennel also acts as a food plant for the larvae of some butterfly and moth (Lepidoptera) species including the mouse moth and anise swallowtail. 4-6'H x 1.5-3'W. USDA Zones 4-9.
