A perennial herb grown primarily for its tasty leaves (cucumber flavor, the young leaves are best), which are used fresh off the plant in salads, soups, herbal butters, vinegars, and cold drinks. Also reported to have medicinal value. Synonymous with and sometimes sold as Poterium sanguisorba. The foliage has a low, rosette form; greenish flowers with purple-tinged styles bloom in July. Grow in well-drained soils in full sun. Tolerates deer but not drought. Good for borders, herb gardens, and vegetable gardens. 0.75-2'H x 1-2'W. USDA Zones 4-8.
